Cranberry Bark |
Years ago I discovered this recipe (if it can be called that because it is so simple to put together) in Canadian Living magazine. The dried red cranberries and the green shelled pistachios make this a very festive bark. This is still one of our favourite and quick treats to make during the holidays.
**Cranberry Bark**
- 1 cup shelled pistachios or chopped almonds
- 1 lb (500 g) white chocolate ( I use 1/2 confectioners coating and ½ good-quality white chocolate)
- 1 cup dried cranberries
1. On baking sheet, roast pistachios in 350 F oven for 8 – 10 minutes or just until fragrant but not coloured.
4. Stir remaining cranberries and pistachios into cooled chocolate. Pour mixture onto foil-lined baking sheet, spread into rectangle just under 1/2 –inch thick. Press reserved cranberries and pistachios into top.
5. Refrigerate for at least an hour or until hardened. Break into pieces. (Can be refrigerated, wrapped in plastic wrap and stored in air-tight container for up to 1 week)
Makes about 1-1/2 lbs

Oh, I love this! What a great gift this would be, packaged in a clear bag with a pretty bow! Could I just use a whole block of white chocolate? or do I have to mix it?
ReplyDeleteThe cranberries are steamed only because it makes them softer so that the bark is less chewy...so I am told. I have made it before without this step and the bark was just as delicious Peter!
ReplyDeleteI have given this as a gift many times! I use the mixture of chocolates only because there is less chance of the chocolate seizing. If you are good with chocolate, which I am not, use just good quality chocolate like Callebaut's.
I think this sounds so good; white chocolate, cranberries, and pistachios go together well. I most likely will make this. I've been thinking about making bark.

Lovely lovely idea, and would make a good Xmas pressie too. I would have to swop the white chocolate for dark mind. Lovely. Think I'll make some of this at the weekend with Cerys!
