Buttermilk Pumpkin Waffles with Sautéed Apples and Maple Syrup

Do you believe in fairies? I have always been a believer and as a child kept a small fairy in a jar until I was convinced it was in her best interest to let her go!!!! On your next walk through the burnished woods on one of these crisp fall days, take a moment to stop and listen and you will hear the fairies rustling through the leaves. We need to hold on to our childlike imaginations:D Dreams can also come true and in super exciting news this week, I was visited by The Fairy Hobmother who, after reading my plea comment over at Joanne's blog Eats Well With Others, sent me this fabulous Cuisinart Waffle maker! Isn't it shiny sprinkled with fairy dust!



With this wonderful gift I will no longer have to go over to friends homes to make waffles since until this fateful day I did not own a waffle maker of my own. Now I know this is sad for those friends who opened up their kitchens to my culinary experiments, but on a positive note you are welcome anytime for breakfast here in my kitchen!  I have been reading about the Fairy Hobmother and her generosity for a while now. Her home is "across the pond" in the UK granting culinary related wishes to bloggers. My Cuisinart Waffle Maker arrived like magic within a day. Now that it is October the cooler days have settled in. My first instinct when crawling out of a sleep induced coma this Sunday was to load the wood stove up with firewood and get cozy in the living room, but that is only a dream from the past. So my second option was to cook some nice warming comfort food on this Thanksgiving weekend. I had dreamed up a fall-inspired recipe involving two of our favourite fall flavours pumpkin and apple cider. These warmly spiced waffles can be topped with the sauteed cider apples, warmed honey, high protein Greek yogurt or maple syrup. Spice up your fall or holiday brunches with this simple, seasonal recipe for pumpkin waffles. The waffle recipe itself comes from Cooking Light magazine so these are better for you too.

**Buttermilk Pumpkin Waffles with Sauteed Cider Apples and Maple Syrup**
  • 2 cups flour
  •  1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  •  1/2 teaspoon salt
  •  5 tablespoons sugar
  •  1 teaspoon ground ginger
  •  1 teaspoon ground nutmeg
  •  1 teaspoon ground cinnamon
  •  2 large eggs, separated
  •  1/4 cup vegetable oil
  •  2 cups buttermilk
  •  3/4 cup canned pumpkin
  •  Cooking-oil spray
  •  Sauteed Cider Apples (recipe below)
Make waffles: In a medium bowl, whisk together flour, baking powder, baking soda, salt, sugar, ginger, nutmeg, and cinnamon. In another medium bowl, whisk egg yolks until pale yellow; whisk in oil, buttermilk, and pumpkin.

In bowl of a stand mixer fitted with the balloon whisk, beat egg whites until soft peaks form. Add egg yolk mixture to flour mixture, stirring to combine. Gently fold in egg whites just until blended.

Preheat oven to 200°. Preheat a waffle iron and coat it with cooking-oil spray. Ladle 1 cup batter (or amount directed by waffle-iron maker) onto hot iron, spreading with a spatula, and cook until nicely browned, about 5 minutes. Transfer waffle directly to oven rack. Repeat with remaining batter. Meanwhile, reheat apples and syrup.

Break waffles into sections, divide among 8 plates, and top with apples and syrup. Serve remaining syrup on the side.
 
**Sauteed Cider Apples**
  • 2 cups apple cider
  • 1 tablespoon light brown sugar
  • 2 cinnamon sticks
  • 2 tablespoons unsalted butter
  • 2 Granny Smith apples, peeled, cored, and thinly sliced
For the sauteed apples: Combine the apple cider, light brown sugar, and cinnamon sticks in a large saute pan over high heat and boil until reduced by half and thickened to a syrup.

Remove the cinnamon stick, whisk in the butter and add the apples and cook until soft and caramelized. Set aside.

  4. If you believe in fairies, you should read the Cottage Tales of Beatrix Potter series of books by Susan Wittig Albert. These grown-up mysteries are fiction but feature Beatrix Potter as the main character. And fairies often make appearances.

    I would love to try this recipes, but alas, I too do not have a waffle maker!

  5. That's fabulous Val! I too was visited by the fairy hobmother and now have a lovely shiny stand mixer.

    I have the very same waffle maker, so I am glad for some new ideas with it. Graham pooh poohed my first attempt at making waffles for him, so it put me off somewhat.

Pumpkins and apples are what I think about when I think about fall, and you've managed to incorporate both of these! These waffles waft fall. :)The fairy hobmother made a good choice to send you a waffle maker!
    If the fairy hobmother is listening, I would love to have a new food processor. I have one now that I got at a second hand shop, but it's making funny noises and smells kinda funny if it runs very long. I do believe!

  11. Waffles look glorious. Last week, I just ruined a bunch of waffles and it was running all over my counter. Then they stuck. It was a mess. I need to learn the secret to waffle making.
