Grilled Asparagus with Lemon and Chive Dressing |
Today I am doing a little housecleaning with older posts not yet published. Life is insanely busy just at the moment...so hope you enjoy!! This asparagus side dish added a flavourful accompaniment to our lamb dinner of a few weeks ago. Simple but elegant tied together with chives.
**Grilled Asparagus with Lemon and Chive Dressing**
For the lemon and chive dressing:
1 lemon, juiced
3-4 tablespoons olive oil
1 shallot, finely chopped
small handful fresh chives, chopped
salt and freshly ground black pepper
Asparagus
For the lemon and chive dressing, mix the juice of the lemon in a bowl with the olive oil, chopped shallot and chives and season with salt and freshly ground black pepper. Mix dressing with asparagus.
Place asparagus in a griddle pan on medium high heat on barbecue. Cook in griddle pan for 3 or 4 minutes. Dress with any remaining lemon and chive vinaigrette.
Serve.

ReplyDeleteI absolutely love asparagus on the grill. Usually just use salt, pepper and oil, but will try the lemon chive dressing next time as it sounds wonderful. Have a great weekend.

You can't go wrong with asparagus done simply, I think - but this particular dressing I haven't come across before. Not with asparagus, anyway. Will give it a whirl!
