Greek Style Watermelon Salad
Have you ever come across a recipe that you just have to try? You see it advertised on your favourite cooking show or on the Internet and you are lead to believe that you haven't lived until you've tried it. That if you prepare it your senses will be heightened and you will drift somewhere between heaven and Nirvana? I have come across just such a dish. Now.. in all fairness maybe it's just the fact that I am not overly fond of watermelon. I hear your outcries!!! When I was a kid I had watermelon seed spitting contests with the best of them. The watermelon I had taking up space in the fridge was purchased solely for the purpose of making this Watermelon Salad. Perhaps I prefer something a little more piquant like the Watermelon Gazpacho instead.


The jury is still out on this one for me at least, but it got rave reviews elsewhere!!

**Greek-Style Watermelon Salad**
  • 3/4 cup red onion, thinly sliced
  • 2 tablespoons fresh lime juice
  • 6 cups seedless watermelon, cubed
  • 1/4 cup fresh mint, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sweet peppers, diced small
  • 1/2 cup black olives, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
1. Place the onion slices in a small bowl with lime juice. The acid of the lime will mellow the flavour of the raw onion. Let stand for 10 minutes.

2. In a large bowl, combine watermelon, 1/2 the feta cheese, black olives, and onions with lime juice, peppers, and chopped mint. Mix olive oil and balsamic vinegar together and drizzle over salad. Toss the salad so the olive oil and vinegar are mixed through. Top with the remaining feta cheese and garnish with fresh mint.

  1. Well the pictures make it look awesome! I think I would like it, I have always enjoyed fruit in my salads... you know mandarin slices in spinach salad. Pears with brie and mixed greens, Peaches, Apples... why not watermelon. I'll have to try for myself...

  2. I have been seeing watermelon in a lot of salads this summer. I have yet to try it myself, but maybe it's time to take the plunge!!
