Sweet Potato Oven Fries with Avocado Dip


For those of you who frequent my blog you
know that I never miss the Taste & Create event which gets bigger and bigger each and every time. It is the brainchild of Nicole (aka Myamii) over at For the Love of Food . I love to visit her site for all the delicious recipes and tidbits of very helpful information. She even has an on-line store with wonderful kitchen gadgets and gourmet foods. For this months challenge I have been partnered with Teresa of I'm Running to Eat. She has so many delicious recipes that she prepares for her family that it was hard to make a decision. Lately I make my decisions on what I need at the time and this time I needed a healthy snack!!!!! So here comes Sweet Potato Fries with Avocado Dip!!!!! I loved to use of rock salt on the fries which gave them an earthy flavour that I just loved with just a hint of spice with the chilies. I would definitely snack on these some more!!!!



**Sweet Potato Oven Fries with Avocado Dip**

2 large sweet potatoes, peeled or unpeeled, cut into 4-inch long and 1/4 to 1/2-inch thick fries
2 tablespoons olive oil, or more as needed
1 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
Coarsely ground rock salt and freshly ground black pepper, to taste
Avocado Dip, recipe follows

Preheat your oven to 450 degrees F. Line a baking sheet with aluminum foil and set aside.Place the sweet potatoes in a large bowl and toss with olive oil until the sweet potatoes are coated. Add the paprika, chili powder, coriander, salt, and pepper; toss to distribute evenly.

Arrange the coated fries in a single layer on the prepared pan. Bake for 20 minutes on the lower rack until the sweet potatoes soften. Transfer the pan to the upper rack of the oven and bake 10 minutes longer, until fries are crispy. Serve with Avocado Dip.

Avocado Dip

1 avocado
1/3 cup mayonnaise (I used sour cream)
1/3 cup cream cheese
1 jalapeno, seeded and chopped
2 scallions, white and light green part only, chopped
1 lime, juiced
Salt and freshly ground black pepper

Place the avocado, mayonnaise, cream cheese, jalapeno, scallions, and lime juice into a blender or small food processor. Blend for 1 minute or until you have a smooth paste. Season with salt and pepper, to taste.

Serve as a dip for the Sweet Potato Oven Fries.

  7. I'll never forget what a revelation sweet potato fries were the first time I had them.
    Then I discovered you could bake them and they were still grand.
    This is a must try dip for them.

  13. The fries look delicious (one of my favorite ways to enjoy sweet potatoes) and I really like the dip you paired with it. I'm normally lazy and just go with either bbq sauce or molasses but I'll have to give this a try next time!
