Summer Medley with Limoncello and Mint |
Welcome back to this months Cooking Light Virtual Supper Club where we continue our celebration of delicious food on the "lighter" side. We always appreciate you joining us for this event where we get together on the first Wednesday of every month to create a delicious meal from appetizers to dessert with a theme in mind. Ultimately our love of food, blogging and our commitment to a health conscious lifestyle is what has brought these ladies and one gent from Canada and the United States ( joining east and west and north and south) together.
Moving on to its 5th year this is a team effort where we continue to share a love for healthy eating and living. The faces may have changed since our groups birth in 2009 but we have always had a love for Cooking Light magazine with its emphasis on healthy eating and living. We look forward each month to strengthening our bonds, and enjoying each others company virtually. The party goes on for days!!
This months theme "A Backyard Barbecue" was chosen by our very own Sarah of All Our Fingers in the Pie. During the hot summer months the backyard barbecue does double duty as both an oven and a barbecue. Let's see what each of us brings to the table.
Jerry of A Life, Lived regals us with a tasty Farro Salad with Cherry Tomato, Onion, and Almonds.
Our hostess Sarah of All Our Fingers in the Pie tantalizes us with Barbecue Pork Ribs. I think every backyard barbecue should have them:-)
Sandi of Whistlestop Cafe Cooking cooks up some tasty Lemon Caper Parmesan Potato Salad Bites. Likewise.
Susan of The Spice Garden rounds out our menu with Pan Seared Scallop Bites and refreshing Paradise Cocktails.
For dessert I brought along an easily packable and simple seasonal Summer Berry Medley with Limoncello and Mint. Simple and packed with flavour. I had more than one helping of this salad.
**Summer Medley with Limoncello and Mint**
1 cup fresh raspberries
2 cups fresh blackberries
2 cups hulled fresh strawberries, quartered
2 cups fresh blueberries
1/4 cup sugar
1 tablespoon grated lemon rind
2 tablespoons fresh lemon juice
2 tablespoons limoncello (lemon-flavoured liqueur)
1/2 cup torn mint leaves
Combine all ingredients (except mint) in a bowl; let stand 20 minutes. Gently stir in mint using a rubber spatula. Enjoy!!!

Very similar to an Ina recipe I serve every Christmas morning, but hers has a yogurt/lemon curd mixture for the top. Love limoncello! (And the bottle is so big!)

This is the way I like to enjoy our wonderful berries that are in season now. A splash of Limoncello is the perfect finish. Gorgeous photo, Val.

ReplyDeleteSometimes I'll add Grand Marnier to fruit but I think I'd love the Limoncello even better - especially for summer. Simple and delicious.
ReplyDeleteOne of the best parts of summer is summer berries. I love the limoncello in here. Do you know I tried limoncello for the first time only about 3 years ago? I was angry that I had been denied it all of the other years of my legally-drinking-alcohol life!
