Apple Shortbread Pie


Strange things are a brewing today. Looks like my banner has shrunk to almost nothing. Oh well... the thought is still there. I get to look at that view at least once a week anyway and can travel there in my mind.

Another one of my Christmas angels to
brighten my days in the photo.

I made this pie a few weeks ago with it's tender shortbread crust. It is a favourite of mine winter, spring, summer or fall.

**Apple Shortbread Pie**

2 cups all-purpose flour
½ cup white sugar
¼ tsp. salt
¾ cup chilled butter, diced
2 egg yolks, beaten

1-1/4 lbs. Golden Delicious apple, peeled, cored and cut into ¼ -inch slices
1 T. all-purpose flour
½ tsp. ground cinnamon
½ tsp. ground nutmeg

Preheat oven to 400 degrees F.

Sift flour, ½ cup sugar and salt into a large bowl. Cut in butter until mixture resembles coarse crumbs. Fold in egg yolks (mixture will be crumbly). Remove ¼ of the mixture and set aside. Press remainder onto bottom and sides of a pie pan.

1n a large bowl, combine apples, brown sugar, 1 T. flour, cinnamon and nutmeg. Place apples into crust, and sprinkle reserved crumb mixture evenly over top.

Place pie on a baking sheet, and bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F and continue baking 20 minutes, or until top is golden brown and filling is bubbling.

  2. Apple Pie - nothing quite like it! I love your angels too. I'm sure my kids would simply love to look at all the angels on your tree! Chinese food for New Year huh?!! That's interesting!! Take care now Valli!

  7. There is something about the shortbread crust that makes the pie delicious Deborah!
    All the kids love my tree, there is so much going on Dharm; we always have Chinese I guess because when we lived elsewhere a local Chinese restaurant had a special buffet for Chinese New Year but it lasted a week long...we just got into the habit.
    I have a photo of the whole tree, but you can't see all my little angels Nuria...my tree is quite large!
    The little girl in the sidebar Gloria is my daughter when she was younger. She is 20 now. I put seasonal photos of her there each month.
    A glug of cream would be delicious Holler. I like spiked whipped cream on my pies.
