Most folks don...You've nailed this one, Val. Most folks don't understand how easy Thai cooking actually is. The bulk of Thai dishes utilize a handful of really fresh ingredients that are quickly cooked. The number of ingredients and speed with which they can be cooked is important because refrigeration is quite limited. It is amazing to see the dishes that can be prepared by a good Thai cook in kitchens that would make most of us claustrophobic.
