I've never worked with the actual...I love tamarind. I've never worked with the actual fruits before (and feel oblivious--I live in FL, but never knew they grow here!), but instead I have a jar of concentrate (the Indian grocery carries it in pretty much all forms). A very tasty ingredient to work with--I did a sweet & sour orange tamarind chicken which worked really well.
